This third recipe from ALL YOUR PRETTY DREAMS (after Blueberry Pie and She Likes Kielbasa Kabobs) features apples, an autumn staple whether you live in the back-of-beyond Midwest or anywhere else. This is almost like apple pie for breakfast, an event we all look forward to. Warm Apple Pockets are just the ticket for company the morning after Thanksgiving, or any chilly morning with friends and family.
Warm Apple Pockets
3 sweet apples, peeled, cored, and thinly sliced
2 tbsp sugar
2 tbsp flour
pinch of salt
1 tsp apple pie spice
1 tbsp vanilla extract
1 pie crust
1 egg, beaten
Preheat oven to 375 degrees. In a bowl toss apple slices with sugar, flour, salt, spice, and vanilla until evenly coated. Spread pie crust flat on a lightly greased baking sheet. Pile apples on one side, leaving a 1-inch border. Brush border and opposite half of pie crust with milk. Fold dough over apples. Do not overstuff. Fold over edges and pinch together to seal. Cut several small slits in the top of the pocket with a sharp knife, then brush top with beaten egg. Bake for 40 minutes, until flaky and golden brown. Serve warm.
